Creative Eats: Mandarin Orange Fool

Last night I decided to make a mandarin orange fool. A fool is an English dessert of custard with fruit puree folded in. Nowadays, most people forego the custard and use whipped cream instead. I decided to make whipped cream instead of custard.

What brought my attention to this recipe was an incident that happened three weeks ago. There is this 18th century YouTube channel that makes recipes relating to Colonial cooking. The channel decided to make a "recipe fit for the Washingtons", which was an orange fool. Alt-Right fanatics and Trump fans took the name the wrong way, the alt-right snowflakes thought the channel was mocking Trump, and they all posted nasty comments on the channel. They were later deleted and the creator had to release a video statement stating his channel is not a channel for politics, but 18th-century cooking. I ended up subscribing to his channel.




I decided making whipped cream would be easier than making a custard. I found a recipe for a whipped cream fool, it was a blood orange fool. Blood Orange Fool
However, Wegmans ran out of blood oranges and the produce clerk suggested substituting with Mandarin oranges instead.

Tonight I made the Mandarin orange fool with the following recipe:

3 Mandarin oranges, peeled
1/2 cup fresh honey
1/2 cup water
8 oz. heavy whipping cream
8 oz. Mascarpone cheese
1/2 teaspoon almond extract


Put the three peeled oranges into a sauce pot.


Along with 1/2 cup honey. (There's 1/4 here... but I ended up putting in more)

Add the water.

Let boil.

Simmer for 10 minutes.


What it looks like after it simmered for 10 minutes.


Put half of the orange mixture in the blender.

Blend until smooth. Put to the side. Keep the other half of the unpureed mixture in the sauce pan.


Beat the heavy whipping cream until it forms peaks.


Add Mascarpone and almond extract.

Mix until smooth.

Layer the whipped cream and puree.

Add the whole fruit.






It's a tad tart, but delicious! Next time I really want to make this fool the next time with blood oranges. Blood oranges are sweeter.
