Canada Day Meal

Last night I decided to make a very special Canada Day meal. My parents were at a Tom Petty concert and I had the evening to myself to cook. I decided to make salmon and rice pilaf. The salmon was even farmed in Canada!

The recipe I used was made up by me. It was simple:

3 scoops of honey
1/2 cup squeezed lemon juice
1/2 cup squeezed blood orange
pinch of salt
pinch of pepper.

Cover and let the salmon marinate for two hours. After two hours, cook until the salmon is flaking. I also added cilantro to the pan to counteract all the acid from the lemon and blood orange. I think the honey helped too.

Set a Canadian flag on the table as decoration for the occasion.

For dessert, I had a shortcake biscuit with strawberry yogurt and raspberry topping. It was delicious!
